Difficulty: Easy, Total time: 45mins Makes: 3-4 cups
Ingredients:
4 cups of rolled oats (not instant oats)
2 cups sweetened shredded coconuts
1 cup sliced or chopped nuts or seeds
1 ½ tablespoons of packed light brown sugar
½ cup of honey
½-1 tsp vanilla extract
½ cup olive oil (can use vegetable oil)
1 ½ cup dried fruit
½-1 egg white
Steps :
1.) Heat your oven to 300 F
2.) Mix your oats, shredded coconuts, brown sugar, honey, vanilla extract, olive oil, and egg white in a bowl. (All but the dried fruit and nuts)
3.) Spread the mix on a thin even layered baking pan with rim
4.) Bake for 15mins, stir and bake for another 5-15 mins until light golden brown
5.) Place baking sheet on wire rack and cool to room temp stirring occasionally for about 10-15mins (it will harden as it cools
6.) Add fruit and nuts and toss to combine
7.) Granola can be stored in an airtight container for at least 2 weeks
Notes:
The beauty of granola is you can add as many or as little things all to your liking!!!!!!
a.) My suggestion for nuts is buy them chopped or sliced if they are on the big size
b.) You can also add different types of dried fruit (preferably unsweetened to minimize the sugar content)
c.) The egg white makes it more sticky and takes longer to cook (you can certainly make it without the egg white, it’s just as yummy)
d) You can cut down or increase the recipe size or ingredients to fit your needs and sugar level 🙂
e) If olive oil is too strong use another healthy oil source like coconut oil.
You can add granola to your yogurt, eat it with milk or snack on it by itself. It’s a healthy source of fiber, protein, vitamins and minerals. If you have any other use for or dishes with granola please share.
